Healthy Holiday Treats.

There are so many things I love about Christmas but most importantly I love it that my children all come home for the holidays.  Tonight my daughter, Allie, and I made some healthy no-bake protein balls.  They were so easy, anyone can make them.  At this time of year, every where we turn we are faced with so many unhealthy treats.  Here is a recipe my sister shared with me that is tasty and good for you.  Enjoy - Happy Holidays!

No-Bake Protein Balls

6 - 8 Dates
1/2 to 3/4 cup ground Almonds
1/2 cup ground Flax Seeds
1/2 cup ground Walnuts or pecans
1/4 cup ground Sunflower seeds
1/2 cup ground Carob Chips
1/4 to 1/3 cup Peanut Butter or Tahini
1/4 to 1/3 cup Raw Honey or Agave

All of the nuts and carob chips can be ground in a coffee grinder.  Next put all of the ingredients in a mixer (not Vita Mix).  The mixture should be slightly sticky so that the balls stick together.  If too dry, add more honey/agave and/or peanut butter/tahini.  Lastly, roll into balls and coat lightly with either carob powder or almond power (set some aside from above ground mix so it is ready to go).  Store in refrigerator.

The ingredients are all estimates.  You can adjust according to your own desires.

These make great Christmas gifts!
